About Eudin Espinoza Jimenez

Eudin Espinoza is one of our producers in the community of San Pedro Yosotatu, this little town is made of 40 family members and neighbors who sought autonomy and independence from larger organizations.
This season, all of the producers worked heavily on improving their ability to dry parchment at a slower, more even rate. Some have invested into building raised beds to accomplish this. While overall volume is small, you’ll find that it’s some of the best quality out there.
Eudin named his farm “Agua Fria”, which means Cold Water because there is a small river with very icy waters crossing the farm.
